Greaseproof paper is a non-absorbent paper used especially in the United Kingdom and Australia for baking purposes. A protective barrier on the paper prevents grease from soaking through it.
Greaseproof paper is used for wrapping foods for storage, especially greasy foods such as butter, bacon or doughnuts. It is also used to separate layers of pancakes, cookies or other baked goods for storage. It can go from freezer to refrigerator to microwave with no problems. Greaseproof paper is also used to line cake and muffin tins, though, paradoxically, it must be lightly greased for these uses.
